Andes Mint Cupcakes



      Me and my friends decided to try this recipe, and it was amazing! We used a different chocolate cupcake recipe that my mom had, so I don't know how the chocolate cake will work. The frosting was very sweet so I wouldn't pile it on too high, but still super yummy! Chocolate Cake
Produces approx. 30 cupcakes

Ingredients:
  • 2 cups sugar
  • 1 3/4 cup flour
  • 3/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup veg. oil
  • 2 tsp vanilla
  • 1 cup boiling water
Directions:
  1. Preheat oven to 350 degrees. Line muffin cups.
  2. Stir together all dry ingredients in large bowl.
  3. Add eggs, milk, oil, and vanilla; beat on medium for 2 min. Stir in boiling water (batter should be thin).
  4. Fill cups 2/3 full. bake 20-25 min.
